We only accept boned out meat. After you bone your animal out, preferrable freeze it in 1 to 2 gallon Ziploc bags, to ensure fast freezing. If in larger batches be sure to wrap tightly to help to prevent freezer burn. If you want jerky, separate the whole muscle, bag and keep separate from the scraps.  Always freeze immediately after separating.  Deliver your meat to us preferrable frozen, but will accept fresh. The fresher the meat the better the sausage.
